Vinifikation Nastergal is dominated by Tempranillo, a Spanish grape variety known for producing big, powerful wines. The Tempranillo is sourced from slate soils growing along the Berg River in Wellington, providing plenty of backbone and aging potential. To balance the power of the Tempranillo, it is blended with ripe Alicante Bouschet grapes, rooted in the deep red soils of the Stellenbosch mountains, contributing spicy aromas and intense color. Small parcels of Touriga Nacional, Souzão, and Touriga Francesa, also from the Stellenbosch mountains, complete this unique wine. The different grape varieties are fermented separately in open-top fermenters, with a small portion as whole bunches. After pressing, the wine is aged for 12 months in French oak barrels, 6% of which were new wood.
