Vinifikation The Springdoring hails from an old vineyard on the southern side of the Paardeberg. This is the epitome of Swartland Chenin from old vines – perfumed, with a balanced fruit purity that leads to a structured, long, and spicy finish, accompanied by a fresh salinity. The grapes were whole-bunch pressed, and the free-run juice was naturally fermented in old French oak barrels. The Springdoring was then aged on its lees for 10 months before being bottled unfiltered.
