Vinifikation The Springdoring comes from an old vineyard on the southern side of Paardeberg. This is the epitome of Swartland Chenin from old vines - perfumed, with a balanced fruit purity that leads to a structured, long and spicy finish, accompanied by a fresh salinity. The grapes were pressed as whole bunches and the free-run juice was naturally fermented in old French oak barrels. The Springdoring was then aged on its lees for 9 months and subsequently bottled unfiltered.
