Vinifikation The soils are quartzitic in nature and originate from Table Mountain sandstone at an altitude of 425 m above sea level. The botrytized grapes are selected at harvest for the Sauvignon Blanc Reserve Collection and left on the vine until the botrytis is advanced and the concentration of sugar and acid in the berries is ideal. The grapes were delivered to the cellar and immediately placed in a cold store overnight to lower the temperature to 4 degrees Celsius. The grapes were crushed as whole bunches into containers and cold macerated for 24 hours before fermentation was initiated. Fermentation on the skins lasted 4 days before the grapes were pressed and the fermenting must was transferred to barrels of 25% new French oak. Fermentation lasted 3 months and ended naturally with a perfect balance of sweetness, acidity, and alcohol.
