Unsurprisingly, it displays characteristics from both regions: the glossy yellow fruit and saline quality of the decomposed granite soils of Polkadraai, and the basil stems and mealy intensity from Swartland. Vinifikation While Kamraderie is a single vineyard, Trust Your Gut is a blend from two different parcels. One is a 40-year-old block in Joubertskloof on the western side of the Paardeberg in Swartland, growing on soft, sandy granite soils. The other 27% of the wine comes from the Polkadraai Hills in Stellenbosch, farmed by Jozua Joubert, the famous Karibib. The commonality that links the two vineyards is their granite-based soil. The grapes are whole-bunch pressed and allowed to settle overnight. The next morning, the wine is transferred to 500-liter old French oak barrels to begin natural fermentation without any additions. The wine remains on its primary lees until bottling in November. Stellenbosch brings powerful fruit aromas such as pineapple, dried mango, and apricots. It tends to have slightly more fruit weight than the grapes from the Paardeberg. Swartland, on the other hand, brings tension and focus to the palate.
