Vinifikation The grapes are harvested in the early morning hours to preserve the aromas and freshness. They are then destemmed, crushed, and immediately pressed without skin contact. Alcoholic fermentation takes place in stainless steel tanks, with 8% of the juice fermented in oak barrels. The wine ages on fine lees for 100 days and is then blended.
