Vinifikation Two Stellenbosch parcels are used for the production of this beautiful Chardonnay, one on Simonsberg and one on Helderberg. The grapes are harvested by hand and whole-bunch pressed to extract the juice as gently as possible. The juice is then settled overnight and spontaneously fermented in 228-liter French oak barrels. 33% new, 33% second fill, and 34% third fill. After fermentation, the wine was aged for a further nine months before being filtered and bottled.
