Vinifikation Good long winter but late rains and cold, delaying pruning. Great wind-free conditions during flowering resulted in a high-yielding vintage. February temperatures were extremely hot, pushing ripening, allowing a fast harvest especially for white wines. The highest tonnages for Waterford Estate to date. The white wines were challenging, but the reds have impressed. All components of the Jem assemblage are sourced from vineyards grown on Waterford Estate. Of the property’s 120 hectares, 48 hectares of vineyards are spread across the property, providing diverse soil and varietal selection. The extreme mountain Helderberg Stellenbosch region as well as close proximity to two oceans, provides a warm, yet uniquely cool region at night. The Jem was matured in French barriques for 19 months, of which 32% consists of new wood. Only 2800 cases were produced.
