Vinifikation The hand-picked and hand-sorted grapes, with the exception of the Cabernet Sauvignon, were fermented on the whole cluster. Fermentation took place spontaneously and naturally in old, open French oak barrels, with regular manual punching down of the cap. After fermentation was complete, the wine matured for 27 months in French barriques (10% new wood) and in large old French foudres with a capacity of 9000 liters.
