Vinifikation We harvest according to taste and find it important to spend a lot of time in the vineyards to see how the flavors are developing. All grapes were hand-picked into small harvest crates, sorted in the vineyards, and brought to the cellar by our horses. To ensure that only the best berries are used, we also sort all grapes by hand in the winery. These were then filled into our wooden fermentation tanks via our gravity system. The Rhône grapes were fermented as whole clusters, while the Bordeaux grapes were destemmed. Fermentation began naturally, with the yeast present on the grapes to enhance the flavors prevalent in the vineyards. We also do not add sulfur at this stage. Throughout fermentation, we gently punched down the cap twice a day to slowly and gently extract the tannins. The wine spent about 30 days on the skins to allow the tannins to soften. This duration depends on taste. After the maceration period on the skins, we allowed the wine to drain by gravity – still without pumping. The grape skins also fell into the basket press and were gently pressed to extract the last remaining wine, aroma, and color from the skins. The grape varieties were aged separately in French oak. 600L barrels for the Rhône varieties and 225L barrels for the Bordeaux varieties. Only 10% of the barrels were new to avoid wood flavors dominating our wines. After 12 months in barrel, we blended the Cabernet Franc (30%), Merlot (22%), Syrah (36%), and Petit Verdot (12%) and stored them in our wooden fermentation tanks for another 5 months. This wine is unfined and lightly filtered.
