Vinifikation The Chenin Blanc is a blend from three different vineyards. Two are located in the Paardeberg region on granite soils and were planted in 1971 and 1980 respectively, while the third vineyard is north of the town of Malmesbury on red, iron-rich soils, planted in 1981. All vineyards consist exclusively of bush vines grown without irrigation. The granite components are linear and mineral, showcasing white fruit spectrums and imparting freshness. The iron-rich influences, however, give the final blend, which is an equal split from all three vineyards, a beautiful yellow aromatic that adds richness and texture to the wine. The grapes were picked separately and pressed as whole bunches. The juice settled overnight without enzymes, and after 24 hours, it was transferred to old 300L barrels. Natural fermentation occurred, and the wine matured on its lees for 10 months before bottling.
