Vinifikation The Grenache Blanc is made from grapes grown on a single vineyard in the Voor-Paardeberg region on granite soils. The uniqueness of the Voor-Paardeberg terroir is underpinned by the influence of the southwesterly wind, which begins to blow here in the afternoon. Winemakers refer to this wind as the "air conditioning of Table Bay." It cools the vineyards at night, causing the grapes to ripen more slowly and better retain their acidity. All grapes were harvested in the early morning, packed into crates, and stored in a cold room for 24 hours. The following day, the grapes were pressed and transferred directly into 500-liter old oak barrels, where natural fermentation took place. The wine then matured on its lees for 10 months before being bottled.
