Vinifikation The Syrah is an assemblage of three different vineyards, growing on slate, granite and iron soils respectively, to showcase the diverse soils of the Swartland. All grapes were individually hand-harvested, packed into crates, and stored in a cold room for 24 hours. The next day the grapes were sorted and transferred into open-top fermenters (100% whole bunch) where they underwent a three-day cold maceration before natural fermentation began, aided by two to three pump-overs per day to encourage extraction. The wine spent a total of 16 days on the skins before we lightly pressed it off. Thereafter, 60% of the juice was matured in old 500L oak barrels and 40% in concrete vessels. The vintage was then allowed to age for 10 months before being blended and bottled.
