Vinifikation David Trafford's Sijnn project is located in Malgas on the Breede River. Forty kilometers from any other vineyards, the incredibly rocky soil and the microclimate influenced by the Breede River are unique in South Africa. After manual harvesting, the grapes are sorted in the cool morning. They are then gently crushed and cold macerated for 2 hours before being pressed in a basket press. The Sijnn White is fermented in 400L and 700L barrels for approximately 10 months and then bottled unfiltered.
