Vinifikation All grapes are – depending on the vineyard’s location – hand-picked over an extended period. In the cellar, they are destemmed and undergo a combination of inert and oxidative pressing. The must is then pre-clarified and transferred to stainless steel tanks for fermentation, using various yeasts to develop different characteristics. Regular stirring of the lees ensures a balance between the naturally high acidity and low pH values. Afterwards, the wine is assembled, filtered, and bottled.
