Vinifikation The grapes are sourced from the slopes of the Simonsberg on Table Mountain sandstone. 70% of the grapes were cold-fermented in stainless steel tanks for 3 weeks, while the remaining 20% were fermented in 300-liter French oak barrels and 10% in 4000-liter casks. The wine was aged on the fine lees for 7 months before being bottled.
