Vinifikation The Kaaimansgat or Crocodile's Lair vineyard is tucked away in a beautiful valley, nestled amidst majestic mountains, just 80 km from Hermanus. Bouchard Finlayson has been directly involved with this vineyard for more than thirty vintages. Located 700m above sea level, it ripens a month later than other Cape Chardonnays and benefits enormously from the cool autumn temperatures. The name of the vineyard is shrouded in mystery. According to tradition, runaway slaves from nearby Franschhoek, led by 'Kwaaiman', first settled here. This vintage's Crocodile's Lair harvest was remarkable - not only for its size, but above all for the perfect condition of the grapes and the ideal ripeness and quality, which are not the usual norm. A gradual transition to larger 350-litre oak barrels was made, which further emphasised the purity of the fruit and somewhat slowed down the wine's development. As usual, no bâtonnage, i.e. stirring of the lees, is practised, although the wine remains on the fermentation lees until the barrels are emptied and blended. The wine matured for 7 months in French oak with 21% new barrels.
