Vinifikation The grapes are harvested by hand in the early morning at 23.5 Oechsle. Some of the grapes are pressed as whole bunches, while the rest are crushed and left on the skins. After settling, spontaneous fermentation takes place over the next 40-60 days in 400l French oak barrels under strict temperature control. The wine then matures on its fine lees for 10 months and is bottled without malolactic fermentation.
