Vinifikation The grapes for this prestige cuvée Cap Classique originate from three selected parcels in Robertson with lime-rich soils, as well as from a single Pinot Noir parcel in Durbanville on Table Mountain sandstone. Chardonnay clones CY277 and CY548 were used, along with Pinot Noir PN777. All grapes were hand-picked and whole-bunch pressed separately, with only the cuvée fraction (the first 400 l/ton) used for the assemblage. 50% of the wine (the Chardonnay portions) fermented in neutral French oak barrels and Austrian foudres, with the remainder in stainless steel tanks. After four months of maturation on the fine lees, the components were blended and bottled on May 28, 2019. The wine subsequently matured on the lees in the bottle for 5 years and 7 months before being disgorged and released for the first time.
