Vinifikation The Clay Shales Chardonnay comes from a single vineyard on the Hemel-en-Aarde Ridge, ideally situated in the mountain shadow, at high altitude, and near the ocean. The wine is named after the Bokkeveld shale and clay soil on which it is grown. This combination provides the perfect foundation for a balanced, Grand Cru-quality wine that is second to none. Whole bunches are pressed without the addition of enzymes, SO2, or commercial yeasts during pressing. After settling overnight, the juice was transferred to barrels, with fermentation and maturation taking place over 10 months in a 2600L foudre and 500L demi-muids, 20% of which are new.
