Vinifikation 10% whole bunch. Fermented in small, open-top oak fermenters. Wild yeast fermentation. A combination of gentle pump-overs and punch-downs ensures that only the finest tannins are extracted. Light basket pressing to preserve fruit purity. Aged in 228-litre Burgundy barrels, 30% new, followed by three months in stainless steel tanks before bottling. Further 18 months bottle ageing before release.
