Vinifikation There is something very special about this site in the mountains, old vines, low rainfall, deep red sand over red clay. Huilkrans is made from old dryland farmed Chenin parcels planted between 1974 and 1989 on a gentle south-facing slope at 450m above sea level. These large bush vines are widely planted (low-density vineyards) yielding just over 1 tonne/Ha. In 2020 the farm experienced such severe drought that many of the vines died. There were virtually no grapes. Two years of careful pruning and an excellent winter in 2021 saved the life of the vineyard. In 2022 we had a large yield, over 3 tonnes per hectare. We are very happy that we can bottle Huilkrans again after a two-year break. The grapes were hand-sorted and pressed as whole bunches. The juice was very lightly settled (we like very turbid raw juice), with no additions to the raw juice, spontaneous fermentation in barrels and also in old barrels of various sizes, mostly 400L. Fermentation took about a month. The wine was aged for 12 months on its lees, then rested in tank on its fine lees without fining for another six months before bottling. Very simple, careful winemaking.
