Vinifikation The grapes for the Boekenhoutskloof Stellenbosch Cabernet Sauvignon were hand-picked and transported in small crates to the winery, where they were first carefully hand-sorted and destemmed. For fermentation, the grapes were placed in stainless steel tanks, where they first underwent a cold soak phase and then fermented at 27-30 °C. After the completion of alcoholic fermentation, the wine was transferred to 225 L barrels for malolactic fermentation. The wine matured in French barriques from Sylvain and Saury and was lightly fined with egg whites before bottling.
