Vinifikation After each berry was separately picked, cooled, sorted, and transferred into individual fermentation vats, fermentation was activated by the addition of a yeast culture. In this instance, the yeast originated from an organic vineyard in Stellenbosch, lending expression and individuality to each parcel. Following a minimum two-week maceration, each batch was pressed and transferred into French oak barrels, 17% of which were new. After almost a year in barrel, a final blend was achieved through numerous representative tasting samples. This assemblage was transferred into tank and, after a three-month resting period, was bottled.
