Vinifikation Production of Cap Maritime wines began with the 2017 vintage. The initial vineyards were located in the upper Hemel en Aarde Valley, but unfortunately, production from this area was not continued. The search for alternatives began, and in 2019, a suitable site was found in the Upper Hemel en Aarde Valley. This estate is situated 4km from the ocean on the northwestern side of the valley, offering views of the hills and the Bot River Lagoon. With the 2021 vintage, the opportunity arose to work with parcels from the Overberg and the Hemel en Aarde Ridge. On this occasion, the blend of these two appellations was classified as WO Cape South Coast, and the coastal wines were born. With these wines, winemaker Gottfried Mocke aims to achieve youthful accessibility while remaining true to the house style. His preference for emphasizing texture and aromatic characteristics is a hallmark of his wines. The grapes for the Chardonnay were hand-picked and sorted into small crates before being transported to the winery in Franschhoek. There, a careful triage ensured that only healthy grapes were pressed. The must settled in the tank for two days before undergoing spontaneous fermentation in 20% new French barriques, 50% older barriques, and 30% concrete tanks. After fermentation, the wine matured for another 12 months on its lees with light bâtonnage.
