Vinifikation In 2002, Swiss-born Jean-Claude (JC) and South African-born Carolyn Martin (née Finlayson) accepted the challenge of establishing a wine estate in a remote corner of the Walker Bay wine region. Their forty-hectare, undulating land on the Hemel-en-Aarde Ridge had never been planted with vines, but they recognised the potential and set about transforming it into an exemplary wine farm. Perched high on the Hemel-en-Aarde Ridge near Hermanus, Creation’s vines climb the steep slopes of the Babylon Toren Mountain to an altitude of 350m above sea level. During the annual growing season temperatures seldom rise above 30°C, and the cool night temperature is 12°C lower than the daytime temperature throughout the year. The Pinot vineyards are planted on south-easterly, easterly and north-easterly facing slopes on ancient clay-loam soils. The grapes were harvested by hand, 20% as whole bunches spontaneously fermented in stainless steel tanks. Matured in 10% new French oak barrels for ten months.
