Vinifikation A Biel winemaker in the South African wine paradise - In 2002, Neuchâtel winemaker Jean-Claude "JC" Martin (formerly of Domaine les Grillettes) and his wife Carolyn, a South African with generations of winemaking ancestors, founded the "Creation Wines" winery near Hermanus. As a member of the Biodiversity & Wine Initiative, Creation Wines is committed to protecting and preserving natural biodiversity. The must is fermented at 15°C in stainless steel tanks; malolactic fermentation did not take place. Afterwards, it was aged on its fine lees for 5 months.
