Vinifikation Our Damascene Stellenbosch Cabernet Sauvignon vineyards (a combination of CS337 and CS46 clones) were planted as early as 2001. Intense care is taken to keep the vineyards virus-free. These vineyards are spread across the Bottelary and Polkadraai Hills sites 14-20 km from the Atlantic Ocean as well as the north-eastern slopes of the Helderberg. All of these sites are granitic outcrops, which impart purity and brightness to the wine. The vineyard in the Polkadraai Hills has an extended layer of laterite underneath the decomposed granite topsoil, which contributes to a more structured component. Since this site is on a south-eastern facing slope, it always enjoys a longer ripening period to ensure optimal phenolic ripeness and the highest concentration of tannins to enhance the structure of the wine. The site on the Bottelary slopes has more structured gravel soils with a higher clay content in the subsoil to enhance the breadth of the final product. This site is facing towards Table Mountain in the west. The vineyard on the granitic slopes of the Helderberg faces north-east and lifts the fruit intensity and length. Extremely low yields and smaller berries with very thick skins contribute to high concentration and great structure at moderate alcohol levels. A range of batches was harvested by hand between 20-22 March 2020 at 24.9-25.9° Oechsle. Smaller open-top tanks were used for the primary fermentation where pump-overs took place 2-3 times per day. Once spontaneous fermentation began, pump-overs were carried out as needed. Fermentation temperatures peaked at 28°C. Spontaneous malolactic conversion and maturation take place in new French oak barriques as well as 1000-litre foudres. The wine spends 22 months in oak to gradually improve the clarity and stability of the wine, avoiding the need for fining. The wine is racked twice, once after 12 months and again two weeks before bottling.
