Product Description:
Sublime aromas of dried wild flowers, fynbos, and cool slate outline a vision of this Syrah. The wine farm is located 940 meters above sea level. Cassis aromas harmonize with fresh-cut lavender. The palate is supple, full of energy, wrapped around a core of pure, intense dark fruit, driven by a piquant acidity forged in the isolation of cold nights. Layers of tannins, mouthfeel, and elegant integration bring together the fine-grained structure. The blackcurrant finish revolves in an unbroken circle around the palate. This wine will be at its most expressive within five years of the vintage, but with careful cellaring, it will continue to evolve and improve for more than a decade.

Vinifikation This vineyard was planted in 2006 on the oldest farm in the Cederberg, dating back to 1790. The site's elevation is 940m. The clone used is SH22F on R99 rootstock. Sandstone with underlying iron-rich soils. Average annual rainfall of 600-700mm. The cold nights (average minimum winter temperature is 3.8°C) that follow warm days (average summer maximum temperatures are only 22.7°C, but can reach 40°C during heatwaves) lead to massive diurnal temperature variations (averaging 12°C) and thus grapes with a more balanced natural acidity and higher intensity of flavour, colour, and tannin synthesis. The slower phenolic ripening process generally means a much longer ripening period, which helps preserve the acidity and, essentially, the stability of the wines. In winter, the northwesterly winds from Elandsbaai (80 km away on the West Coast) bring the rain, and in summer, the cooling southeasterly winds blow from the Ceres Plateau.
