Vinifikation The Syrah grapes were sourced from two different vineyard sites within the Stellenbosch district. While both vineyards are planted above 300 meters above sea level, they were planted to Syrah clones SH9 and SH22B. With soils dominated by decomposed granite, they each bring their own nuance and complexity to the wine. The vineyard on the Polkadraai Hills was planted in 1996 on a south-easterly aspect, contributing most of the perfume and spice. Structure and fruit intensity come from a low-yielding granitic-soiled vineyard in Bottelary Station, a ‘mother block’ planted in 2001 on a north-westerly aspect. To highlight the impact of site on the Stellenbosch Syrah, harvested fruit was divided into numerous smaller fermentation lots, with whole-bunch inclusion varying from 50 to 100 percent per vessel. Open-top fermenters and 1000L oak fermenters were pumped over two to three times daily. The remaining two 1000L oak fermenters were treated to a submerged cap technique to improve the wine's body and fruit concentration. A unique element in the final assemblage comes from a parcel retained as 100% intact whole bunches. This was stored under pressure for 30 days before pressing, undergoing a carefully controlled carbonic maceration in a sealed tank. No pump-overs or punch-downs occurred during fermentation, allowing this carbonically macerated component to lend tremendous fruit purity and silky tannins to the final blend. All fermentations occurred spontaneously with naturally occurring yeasts. Malolactic conversion occurred spontaneously, with maturation taking place in 1000L oak foudres for 11 months. The wine was bottled unfiltered to ensure a more complex and authentic expression of the Syrah.
