Vinifikation The vineyards that provide the fruit for this wine are farmed across three impressively distinct sites in the Swartland. The first block of bush vines is situated on the foothills of the Paardeberg (at 290m altitude), rooted deep in ancient, free-draining, decomposed granite soils. This site faces north-west and contributes perfume, spice and purity to the wine. The second vineyard is located in the heart of the Swartland and faces north. These bush vines are planted on Malmesbury Shale, which offers striking acidity and a mineral note. The predominant source is the western foot of the Riebeek Mountains at 340m above sea level. This slope consists of a shale outcrop that faces south-east, offering plenty of structure and fruit depth. This Swartland Syrah shows the typical concentration of the low-yielding vineyards planted under Mediterranean climatic conditions. With this in mind, whole berry fermentation was employed to ensure the finished wine does not lack elegance. Depending on the parcel, between 50 and 75% of the fruit was fermented as whole bunches. Fermentation took place in open-top fermenters and two 1000-litre foudres, with the number of punch downs limited to a maximum of two per day during the main fermentation. All fermentations were spontaneous. Malolactic conversion took place spontaneously, after which the wine was aged in 1000-litre oak foudres for 11 months. The wine was bottled unfined to ensure a more complex and authentic expression of the Syrah.
