Vinifikation High up on Witzenberg Mountain, within reach of Ceres, at an altitude of 960 meters above sea level, lies this unique South African 'appellation' with a continental climate and frequent winter temperatures that drop below freezing. The cooler night temperatures and hotter daytime temperatures during the growing season lead to slower ripening and more concentrated fruit. The well-drained, yellow slate soils are often covered with a layer of snow in winter, providing perfect conditions for the dormancy of the vines, a much-needed rest and recovery phase before the growing season. The grapes are hand-picked, sorted, destemmed, and pressed. After the solids have settled, the juice is inoculated with yeast strains and fermented in French barriques, of which 1/3 are new barrels and the rest are second and third-use. The lees are regularly stirred before and after malolactic fermentation. In total, the wine was aged for 6 months in barriques.
