Vinifikation The Journal represents the ultimate expression of the terroir of Diemersdal, the farm where the Louw family has been growing grapes for the production of fine wines for six generations. The wine implies the continuous, the living, and the evolving. It ensures that the events of time are captured and preserved as moments - as reminders of past generations and as a reference for generations to come. The superior quality of this range and the craftsmanship with which the Journal wines are made are the result of the Diemersdal tradition and its previous generations of winegrowers. The grapes were harvested at optimum ripeness and fermented in open wooden fermenters for 5 days at 24°C–28°C with regular punch-downs. Malolactic fermentation was completed spontaneously in tanks before the wine was transferred to 225-liter French oak barrels and matured for 22 months.
