Vinifikation The grapes were hand-sorted, lightly crushed, and cold-macerated in stainless steel tanks for three days before spontaneous fermentation with regular pump-overs. After fermentation, the wine remained on the skins for an additional 2 to 3 weeks before being transferred to French oak barrels for malolactic fermentation and then aged there for 12 months.
