Vinifikation The grapes for this exceptional Cap Classique Blanc de Blancs originate from the estate’s oldest and best parcels in Robertson, grown on lime-rich, calcareous soils. Five different Chardonnay clones contribute to the distinct complexity and minerality of the base wines. The harvest was carried out by hand in the early morning hours, followed by gentle whole-bunch pressing, using only the cuvée fraction. 46% of the base wine fermented in neutral French oak barrels and large foudres, the rest in stainless steel tanks – for depth and structure without dominant oak influence. After five months of aging on the fine lees, the wine was blended and bottled for the second fermentation. It then matured on the lees for 60 months before being disgorged – the result is a Cap Classique of precision, elegance, and distinct yeast complexity.
