Vinifikation The grapes are hand-picked and carefully sorted, ensuring that only the finest fruit is used for winemaking. Fermentation takes place in open-top fermenters, employing traditional methods such as manual punching down of the cap to achieve optimal extraction of color, aromas, and tannins. After fermentation is complete, the wine ages for 12 months in French oak barrels that have been used once or twice before. This aging process imparts additional complexity and subtle oak notes to the wine without overshadowing its fruit flavors.
