Vinifikation The world's oldest wine-growing soil consists of decomposed granite on the lower slopes of the Helderberg. This vineyard enjoys the refreshing cool breeze from False Bay (Atlantic Ocean) during the day and the cool night air flowing down the mountain. This led to even ripening of the berries and good natural acidity. The macroclimate is maritime, with cold, humid, wet winters and sunny, warm summers. The grapes were sorted before and after destemming, crushed, and transferred to an open stainless steel tank. Natural fermentation took place between 20°C and 26°C, and the juice was left on the skins for 12 days before pressing. After malolactic fermentation, the wine spent 23 months in 100% new French oak barrels before being bottled.
