The nose is dark and intense with abundant black berry fruits, graphite and lead pencil aromas, a hint of dust and an attractive bouquet of fresh oregano, tarragon, sage and bay leaf. Blueberries, blackberries and ripe plums dominate the fresh, chalky palate with supple tannins and vibrant, refreshing acidity. The wine is juicy, structured and balanced, with a hint of rosemary and thyme lingering in the succulent, soft finish.

Vinifikation The consistent ripening process has given this Cabernet Sauvignon an improved tannin structure. The grapes come from the Helderberg region near Stellenbosch, where the Cabernet Sauvignon is less exposed to warm daytime temperatures and therefore ripens relatively late. Additionally, we've used a small percentage of Cabernet Franc, which imparts a lovely fruit character, silkier texture, and subtle fragrance to the Porcupine Ridge. The wine aged for 9 months in French oak barrels, resulting in greater complexity and structure.
