Vinifikation The Porseleinberg project, named after the low-lying hill range from Riebeek Kasteel, is an extreme viticulture. With large, jagged pieces of slate protruding from the ground and only 18 inches of annual rainfall, establishing a vineyard in this windswept location was not easy, but the first signs of quality are there, and Kent is happy to have taken root. Most of the fruit from Porseleinberg is used for the Boekenhoutskloof and Chocolate Block labels, but the cream of the crop goes into the estate's own bottling. It is a Syrah fermented with stems in concrete tanks, then aged in concrete eggs and large wooden foudres, mimicking the traditional techniques of the Rhone Valley, whose wines Kent loves.
