Vinifikation The hand-picked grapes were cooled overnight before being destemmed and fermented in open concrete tanks. Gentle extraction was achieved by lightly pumping over twice a day. The wine matured for 16 months in French oak barrels with a volume of 225 liters, which were filled for the second and third time.
