Vinifikation After the late harvest, the grapes are pressed, before the must is cold settled overnight in stainless steel tanks without the addition of pectolytic enzymes. The juice is transferred to French barriques where spontaneous fermentation takes place. The wine then matures for 8 months on fine lees in barrels without any sulfur additions, before being racked from the barrel, sulfured, and prepared for bottling.
