Vinifikation The hand-picked grapes were chilled overnight before undergoing spontaneous fermentation. A portion (30%) consisted of whole bunches and was fermented in a combination of open concrete fermenters and plunging fermenters. The wine then matured for 16 months in seasoned oak barrels, 2500-litre foudres and 400-litre second-fill barrels.
