Jewel Box is inspired by our ethos of African Synergy, merging old European heritage and knowledge with our modern African environment and culture. The sheer magnificence of the stars gazing down on countless Southern African camping expeditions has left a wonderfully indelible memory. To stand up in an almost trance-like state and watch the regular bursts of shooting stars, the unending traffic of satellites and the slow shifting of constellations over time is truly incredible. The grapes were hand harvested at the end of January 2015 and gently pressed to achieve a maximum of only 550 litres per ton. The fermentation of the Chardonnay was split between stainless steel and old French Oak barrels, whilst the Pinot Noir was only fermented in stainless steel. This creates the foundation for complex building blocks critical for the final blend. A further technique of utilizing a reserve portion of Chardonnay which has spent 12 months in old French barrels also adds a very interesting blending component. The final blend is comprised of 70% Chardonnay and 30% Pinot Noir. The wine spends a minimum of 38 months on the lees to develop optimal complexity. Only 3,090 bottles were produced.
