Vinifikation Chenin Blanc is not only widely recognised as a ground-breaking grape variety for South Africa but also for the ArtiSons - producing a Chenin Blanc from the old bush vines of 1964 planted on decomposed granite in the Bottelary Hills was a ticking time bomb, and the result from these dryland vineyards is The Mothership. The grapes are harvested between 22 and 24 Oechsle with 6 to 12 hours of skin contact. The wine is racked into barrels and concrete eggs for a slow wild yeast fermentation and, once fermentation is complete, blended into concrete eggs for up to 12 months of lees ageing.
