Vinifikation
This classic wine has remained true to its composition since it was first produced in the 1990s. A remarkable Bordeaux blend, dominated by Cabernet Franc, bolstered by Merlot and complemented by Cabernet Sauvignon. This majestic estate lies at the foot of the Helderberg, with panoramic views stretching as far as Cape Point, Table Mountain, Robben Island and the Stellenbosch Hills. Here, the vineyards are planted at an altitude of 300 meters above sea level, overlooking False Bay to the southwest. It is this unique location and positioning that supplies the vineyards with gentle cooling sea breezes, enabling optimal slow ripening during the summer months. All grapes on the estate are hand-picked. Once they arrive in the cellar, the grapes are gently transferred by gravity into both stainless steel and concrete tanks for fermentation. This is followed by a period of cold maceration, allowing for a rich extraction of color, elegant aromas, and bright flavor. At the end of fermentation, an extended maceration follows, imparting a soft texture, increased color intensity, and complexity to the wine. Our wine is matured in a combination of 225-liter oak barrels, 9000-liter foudres, and traditional 4500-liter cement tanks for a period of three years. These various vessels each add a variety of elements to the wine, ranging from fruity character to subtle oak influences. These elements are selectively brought together during winemaking to form a harmonious whole.
