Vinifikation
Partially whole-bunch pressed and destemmed to obtain colour, with only 400 litres per tonne selected for this purpose. Each varietal was separately fermented in stainless steel tanks with a variety of yeasts. The wine was kept on its lees for an extended period with regular stirring for about 6 months, before being carefully filtered and bottled.
