Vinifikation The Semillon was planted in 1991 on the south-facing Korhaan flats at 220m above sea level. The Sauvignon Blanc grapes used in this assemblage come from the 29-year-old Schaapenberg vineyard. This single vineyard is located at 320m above sea level and faces directly south. The row orientation is east-west and the vines are planted with 2 clones, 316 and 317, both from the Loire Valley. Both the Semillon and Sauvignon grapes were harvested by hand, the Semillon two days after the Sauvignon, and whole bunch pressed and fermented in barrel. The harvest was on February 11th and 12th respectively. The Semillon was fermented in 25% new Francois Frere barrels and the Sauvignon in old 500-liter barrels. The wines were aged for 9 months before being bottled on November 1st, 2017.
