Vinifikation We pick to taste and spend a lot of time in the vineyards to see how the flavors are developing. All our grapes are hand-picked, chilled overnight, and processed the following morning. We are always trying "new" or shall we say... old, traditional approaches, so after starting in 2009 with whole-bunch pressing for our Rhône varietals, we are now also working with Cabernet Franc. The grapes are hand-sorted, so only the best grapes go into the wooden fermentation tanks with our winery’s gravity flow system. Alcoholic fermentation began spontaneously with the natural yeasts found in our chemical-free vineyards. Punching down the cap during fermentation took place twice daily. First by foot, and then at the end of fermentation, with a gentle punch-down machine to ensure moderate extraction of color and tannin. The wine spent a total of about 30 days on the skins to aid in tannin integration. The skins were separated from the juice by gravity and then gently pressed in a basket press. All the wine underwent malolactic fermentation in approximately 11% new oak and the rest in second and third-fill French barrels, and then aged for 32 months. We make the wine as natural and untamed as possible, with no acid or enzyme additions.
