Vinifikation
The 2021 Cinsault Blanc comes from a 0.2-hectare single vineyard of 35-year-old vines in Wellington, which were mutated from Cinsault Gris, and then Cinsault Blanc, possibly in the 1930s. Previously, it was used for brandy production. Still the first and only Cinsault Blanc bottling available that is made from this forgotten grape variety. The fifth vintage of this wine gets better year by year as we learn more about this vineyard and grape variety. In the cellar, the grapes were whole-bunch pressed and the “dirty” juice was racked straight to amphora to ferment and then age on primary lees until bottling after around 8 months.
