The Tokara Director's Reserve White presents itself in the glass with a delicate straw color and astonishing brilliance. It exudes a complex bouquet of ripe passion fruit and pink grapefruit that bewitches the senses. Pleasant notes of lemongrass, elderflower, and freshly baked brioche also join in. Vinifikation The grapes were destemmed, crushed and immediately pressed in our inert press. The press juice and the free-run juice were kept separate and clarified overnight before the clean juice was drawn off. For this wine, only the free-run juice from the best parcels is used. The juice was then inoculated and transferred to 400-liter barrels for fermentation. All barrels used are French oak, 31% of which are new. After fermentation, the barrels were topped up and aged on the lees for 9 months, with regular stirring of the lees. The wine was blended, stabilized, filtered in November and bottled shortly thereafter. The wine aged for a total of 10 months in barrel.
